Aoi Co., Ltd., based in Okinawa, operates a total of 9 teppanyaki steak restaurants, including locations in Tokyo and Osaka. In 2015, with the reconstruction of the headquarters, we introduced the Halton ventilation ceiling system at our main store in Higashimachi, Okinawa. The ventilation ceiling system has received positive feedback from customers, as it prevents the smell of steak from clinging to clothes even when dining at the teppanyaki grill. Without a ventilation hood, the space feels more expansive, making the interior seem larger. The "ventilation ceiling system" from our company has been installed in the cooking practice room of Building F at the Chiyoda Campus of Otsuma Women's University. The practice room features gas ranges and IH cookers arranged on the practice tables, and classes are conducted using four projectors so that instructors' hands can be seen from anywhere. Since there are no box-shaped hoods obstructing the view, monitors are easily visible from any position, allowing for smooth progress in the practice. The lighting fixtures integrated into the hoods are bright and evenly illuminate the workspace, making cooking lessons comfortable. One of the major design concepts was to make the operational content as visible as possible from the facade entrance. After implementing our "ventilation ceiling system," the entire kitchen became visible from the dining area, allowing chefs to naturally pay attention to hygiene management, resulting in a kitchen that combines beauty and sanitary management. It was a challenging task to meet the requirements for exhaust and intake while also ensuring aesthetic appeal, but through repeated design discussions with the kitchen designers, we achieved a finish that satisfies everyone working in the kitchen. At the historically significant location of Nihonbashi, the Royal Park Hotel's main kitchen handles large-scale dishes, including banquet cuisine, while offering a wide range of services. Here, we have adopted Halton's "Ventilation Ceiling System" and "Capture Jet Hood." Additionally, the "Capture Jet" is arranged within the ventilation ceiling system, and in the center, an M.A.R.V.E.L infrared sensor monitors heat exhaust. Various innovations enhance the efficiency of exhaust collection.
